How To Fix Blues - April 2

    If I plan to keep a blue as well as any fish, I cut the gills to bleed then throw on ice. I fillet the Blue, remove the rib bones and skin. Turn fillet blood line up, cut center of blood line thru the length of fillet and then remove the blood line and pin bones from both pieces. Soak in 1/2 lemon juice and 1/2 water for 7-10 minutes remove and prepare or freeze. My preferred use for blues is to fillet and make herring.

    the best way is to cook them is on a cedar plank when done throw out the fish and eat the plank ..lol

    Small Blues taste rather good if you follow the directions above.
    The keys is to bleed and put on ice immediately!
    I have heard of some folks who marinate filets in Italian salad dressing.

    I really like lemon with fish but wouldn't that lemon juice start to make Bluefish ceviche?
    Also Bluefish does not freeze well.
    I really miss Fish Shake & Bake. On Bluefish it was excellent!
