Smoked Kingfish Cakes

    First I Grill King Fish on my Weber using bulk apple or Citrus whatever wood you like smoking it. after that I crumble it and take out 2 lb for fish cakes freezing the rest I put them in Ziploc bags roll them up and wrap them as tight as I can with packing tape makes them like a sausage looking package good for a year for fish tips and other recipes .
    Smoked Kingfish cakes
    2 1/2 tbsp Duke's Mayo
    1 1/2 teaspoons Dijon mustard
    1 teaspoon Worcestershire
    1 teaspoon garlic herb Old Bay
    3/4 teaspoon salt
    Two cups smoked Kingfish shredded
    1/2 cup Panko bread crumbs
    1/4 onion chopped sauteed
    1 tbsp minced garlic
    Mix everything but bread crumbs and fish
    Fold in fish
    Fold in bread crumbs
    Brown 3 to 4 minutes each side with butter
    A 1/4 cup of pepper jack cheese can also be added.

    one story I have from a friend on Kingfish is this, you grill it on wood cutting board, you take the plank and kingfish off the grill, then throw away the Kingfish and eat the board. His opinion might be a bit strong.
