    Shrimp Egg Omelette Fajita Style

    Since I made some of Ken and Myrna's Shrimp Fajitas, Ken told to to use my leftovers and make an Omelet.

    So here is my Shrimp Egg Omelette Fajita Style, it has everything that my Shrimp Fajitas had it it... (Shrimp Fajitas)

    First I am using my leftovers from my Shrimp Fajitas, so all I need to do was scramble six eggs, pour in buttered pan and cook slowly on low, tune over the omelet, than add all of the Fajita fillings than fold the egg shrimp omelet in half.

    Yup as you may have guess, it was mouthwatering good.

    Marinade: 1 tbsp lime juice (can substitute 2 tbsp fresh orange juice if you don't have limes)
    • tbsp lime juice (can substitute 2 tbsp fresh orange juice
    • 1 tbsp olive oil
    • 1/2 tsp dry chili or ancho pepper
    • 1/4 tsp coriander
    • Salt and pepper
    • tortillas
    Veggies
    • 1 medium sweet onion
    • 1 medium green bell pepper
    • 1 medium red or yellow bell pepper.
    • Mushrooms
    Shrimp Fajitas
