Redfish Ceviche

    2 red fish filets cut into 1 inch cubes
    One large red onion diced very small
    One large red pepper diced very small
    3 large cloves of garlic minced
    3 limes rolled and juiced
    2 lemons rolled and juiced
    1 naval orange rolled and juiced
    Heavy pinch of kosher salt
    Corse ground black pepper to taste
    1 Tsp crushed red pepper
    2 Tsp Tabasco sauce
    1 Tsp white sugar

    Combine everything in bowl, mix well. Then stir in red fish. Let sit in refrigerator covered for one hour, then stir around making sure the fish is completely covered in juice. Put back in refrigerator for another hour. At this time fish will be cooked and ready to eat. I like to serve wrapped in a green leafy lettuce like bib lettuce.you can also eat with tortilla chips. Enjoy!

    What texture does the fish take on from this method? I know it's cooked by the acids, but does it have raw meat texture? Is it white and flaky like you grilled it?

    Sounds good, I have some trout fillets, I wonder if it tastes the same with trout. But now I'm on a mission to go catch some redfish.

    Great recipe. Ceviche is my favorite!
    Triggers and shrimp are fantastic prepared this way.
